Our candied salmon is created using local Wild Sockeye Salmon which we cure for 1 hour in our delicious combination of brown sugar and kosher salt. After curing we smoke it for 3-5 hours in our maple flavours and glaze it with maple syrup. The end results are thick pieces cut into bite size strips! The texture is firm and the appearance is a golden brown glossy colour. Delicious with crackers, cucumbers or just on its own!
